Happy New Year Friends! We start school back tomorrow and I am excited for a routine but I have also loved the slow down. Not waking up at 5:30 enjoying laying in bed just a little longer, staying up late binging Emily in Paris and time with friends and family. I will have a big recap post of 2025 this week and it’s going to be a good one. But for today let’s chat cooking and what I have been cooking these last 2 lazy weeks.

Rotisserie Chicken has really been weirding me out after seeing so many people post about the plastic bags and containers sitting in heat allowing microplastics to be absorbed into the chicken. Yesterday I made a big batch of slow cooker chicken to replace a rotisserie chicken for the week and it was so easy and delicious I will be making this every week.
